It's a trade-off.
The stock RH kernel always has had, and always will have, stuff that's
not in the standard kernel. But the standard kernel also has a great
many stability fixes over the stock RH kernel.
Moving from (for example) 2.4.7-10 to 2.4.14 you'll loose the Ext3
journalling file system, but your system wil benefit greatly in terms of
stability.
Ext3 is due to appear in the upcoming 2.4.15, however.

Usually. Don't be surprised if something doesn't work right away for
some reason.
> Does the new kernel contain the new VM code?
Every stock kernel since 2.4.10 has had the new VM.
