I second that endorsement of LaTeX. Plus, if you are not "geeky"
enough yet to learn all the LaTeX tricks, pick up LyX
(http://www.lyx.org), a swell WYSIWYM (what you see is what you mean)
word processor that acts as a front end for LaTeX. It is free and I
have found it to be easy to use, stable, and full of features (such as
tables, footnotes, end notes, tables of contents). And everything you can
do with LaTeX you can do with LyX, because you can include LaTeX snipits in
your LyX document.
That said, I like keeping documents in XML rather than LaTeX if they
are to be exchanged with others and/or you want to publish the
documents in a variety of formats. I have an XML version of my resume,
for example, and I have a stylesheet that produces a fancy LaTeX
version of it, another for plain text, and another for HTML. I can
update the XML document, type "make", and generate text, HTML, dvi,
PostScript, and PDF versions, no sweat.
