I wouldn't dare do a PhD dissertation in Word, StarOffice, or Abiword. Latex
is built for academic works, so it would be perfect for what you are
doing. With it's excellent Table of Contents macro, auto-section
numbering, and how it does the Biblography . . . wow, why not do it with
Latex ?
I saw someone recommended Lyx. It's been years since I have used it, but
it would work pretty easily for what you need it for, without having to
learn Latex much at all. But you said that most of what you are doing is
text, so perhaps you don't even need that . . . you will probably only
use a handful of Latex/Tex commands anyway.
If you choose the raw Latex route, a good text editor is a must. If you
are someone vi-literate, and use gvim, there is an excellent set of Vim
macros for Latex at:

If you are emacs-guru, a lot of Latex helpers come with it (the macros
I mentioned above for Vim are based on those).
If you don't use or know either, than something else (like Nedit) would
be good. Or you could just use Lyx, too. =)
