I can't answer all your questions, but I think it can be set to *not* update the whole screen.  It can be set to just update the selected window/application.  This reduces CPU load.

>From my experience, the VNC server causes enough load to just barely be noticeable.  Also I've never even heard of TightVNC until now, all my experienc has been with regular VNC.

I have a PC running a shaker table.  The shaker table is really loud and
many of the tests are for 2-24 hours.  Currently we have a VGA converter
that we run a long cable through the ceiling over to the closest offices
and a TV so that we can monitor the test software from a quieter place. 
This does not give us quick access to the Emergency Abort facilities of
the shaker table.  I would like to run a VNC server on this Windows
machine so that we can eliminate the long cable run and have access to the
Abort button.  I don't know what processor the machine is or if it is
running NT4 or Win2k.

The software has a continuously updating graph of the forces applied. 
What kind of load will this put on the processor to run a VNC viewer?  The
network is 100Mb/s.  We can minimize the graph and just monitor the
display boxes that show a half second updated box that is small.  The
Abort button needs to be displayed.  I don't plan on running compressed. 
If nothing is connected to the VNC server what kind of load will it put on
the processor?  Can the server just pull a portion of the screen (ie Abort
button)?  How much memory should be available on the server?
