I believe you could use the base Ubuntu CD to install as either the full
Ubuntu desktop, or as a simple server install ("Server" shouldn't bring
across as much Gnome stuff if you plan to stick with XFce).

After the install finished, you could perform an "apt-get install
xubuntu-desktop" -- see
http://www.linuxquestions.org/questions/showthread.php?p=2398305.

Or you could download the Xubuntu ISO image and burn your own CD to
install from: http://www.xubuntu.com .
