Ok, that machine should be more then capable to handle 100+
simultaneous calls.  Are you transcoding?  Switching from one codec to
another (ala G729 to G711 ) What are you using for recording and
management of the recordings?

The LAMP side of trixbox is not hurting you system performance (or
shouldn't be).  Are you interacting with the Web Server for more then
just administration?  Running any custom applications on it?

When you notice the Jitter, what is the system load like?  I know you
can see this via FreePBX.  I just can't remember where.

When you say you hear jitter even on phone to phone calls is that hard
phone to hard phone or was one of them a soft phone.  Sometime I have
seen PCs where if the processor is loaded the audio will jitter like a
lossy VoIP call.

Yes you could have the management on another server using Asterisk
Realtime and a Database but as far as I understand FreePBX it still
updates all of the /etc/asterisk configuration files.  With realtime
and mysql setup correctly you can actually have 2+ asterisk servers
acting as one, since all the peers and extensions are in a database.
