We have tried a wiki and that is great for taking notes but not so well for step by step instructions and things of that nature. I guess I can look closer at Google Docs. I would like to keep it in house (control issues) if possible but that could be an option.

Depending on the size of the organization....Google Apps (docs) or a
wiki engine like MediaWiki.
