Samba is capable of the same encryption that Windows is, so there is
no reason to change security settings on windows.  By default, Windows
7 uses NTLMv2 but you need to enable that in the smb.conf.  i disable
and refuse NTLMv1 and below.  i think the easiest way to find out the
exact settings available is using the web based package samba-swat
(Samba Web Administration Tool).   In addition, there were updates to
samba to make it work with Windows 7, did not seem to matter if an MS
Active Directory joined Win7 machine or not.

Enabling guest access seems to allow anyone to do anything (rwx) on
your file share.

yum install samba-swat (on redhat)
