mplayer's mencoder utility does things like conversions, scaling, etc.
There is also Film Gimp:

Haven't played with that much, can't say much about it.

I've used MySQL and PostgreSQL.  MySQL is easier, but PostgreSQL is
better, IMHO.
Sean suggested HSQL, which I've also used and works good.  I'd almost
recommend SQLite.

Sun or IBM is the way to go.  If you want to compile to class files,
make sure you have the JDK -- JRE's don't have the Java compiler.
